Zucchini Cookies

...compliments of Larry

1/2 c. shortening
1/2 c. sugar
1 c. brown sugar
2 eggs
1 t. vanilla
3 c. grated zucchini
1 t. baking powder
1/2 t. baking soda
1 t. cinnamon
1/2 t. salt
3 1/2 c. flour
1 c. chocolate chips
1 c. nuts

Cream shortening & sugars. Beat in eggs and vanilla. add zucchini, then dry ingredients. Then nuts & chocolate chips. If too moist add another 1/2 c. flour. Bake at 375 degrees for 12-15 min.

Apple Muffins


Here's another post, looks super yummy.


Apple Muffins
1/2 cup butter
3/4 cup white sugar
1/4 cup brown sugar
Cream ingredients together. Add:
2 eggs
2 tsp vanilla
1 tsp pumpkin pie spice
1 tsp salt
1 tsp baking soda
1/2 tsp bakin powder
2 cups of flour
Mix together and then fold in:
1/2 cup sour cream
3 apples peeled and coarsely chopped
Bake at 350
When cooled frost with Maple Brown Sugar Frosting
I usually half the recipe
2 sticks of butter
3/4 cup brown sugar
1/8 tsp salt
1/3 cup of whipping cream (I usually use a dash of milk)
Heat all ingredients to boiling while stirring constantly
Remove from heat and add:
2 1/2 cup powdered sugar
1/2 tsp vanilla

Cookie Caramel Bars


Surprise suprsie!! I am posting a recipe--

My neighbor made this for a church activity- contest. Unfortuantely I am not in her ward and did not try these, although she won the contest and she posted a picture and the recipe on her blog. I am definitely going to try these, they sound very yummy.

1 1/2 cups flour
1 1/2 cubs old fashioned oats
1/4 tsp salt
1/2 tsp baking soda
1 1/2 cups packed brown sugar
1 cup plus 2 Tbsp butter or margarine melted
1 (14 oz) bag caramels - (48)
1/2 cup whipping cream
1 (12 oz) package milk chocolate chips

Combine first 6 ingredients to form crumbly misture. Unwrap caramels. Melt caramels and whipping cream in a suacepan over low heat. Sprinkle half of crumbly mixture into greased 9X13 inch pan. Back at 350 for 10-15 minutes. Sprinkle choclate chips over baked mixture and top with melted caramel mixture. Sprinkle remaining crumbly mixture on top. Bakd at 350 for 15 minutes. Make a day ahead to allow time for caramel to set.

Makes 2 dozen bars.

Zucchini/Squash Stuffing Casserole

6 oz herb seasoned stuffing mix
3/4 cup butter
2 lbs yellow squash sliced
1 medium onion
1 cup shredded carrots
1 can cream mushroom soup
1 cup sour cream
mushrooms and water chestnuts
salt and pepper

put 1/4 cup butter over stuffing
sautee veggies until soft
put half of the stuffing on bottom
put the squash in the middle
put other half of stuffing on top
Bake at 350 for 30 minutes

Zucchini Bread

3 eggs
2 c. sugar
1 c. oil
3 c. flour
1 t. soda
1/2 t. baking powder
3 t. cinnamon
1 t. salt
2 t. vanilla
2 c. grated zucchini
1 c. nuts (optional)
1 c. raisins (optional)

Mix eggs, sugar, oil, add zucchini and vanilla etc.
Bake @ 350 for 1 hour.
Makes 2 large loaves.

Chololate Zucchini Cake

2 cubes (1 c.) butter (unsalted) softened
1/2 c. vegetable oil
1 3/4 c. granulated sugar
2 large eggs
1/2 c. buttermilk
2 t. vanilla
1/4 c. plus 2 T. unsweetened cocoa powder
2 1/2 c. flour
1 t. baking soda
1/2 t. ground cloves
1/2 t. cinnamon
1/2 t. salt
2 c. grated zucchini (patted dry with paper towels)
1 c. semi sweet chocolate chips
3/4 c. nuts
1 (8 oz.) pkg cream cheese (3 3/4 cups)
1 1lb powdered sugar

In bowl cream together 1 stick of butter, oil and sugar, beat in eggs, 1 at a time, beating well after each addition, beat in buttermilk and 1 t. of the vanilla. Stir in 1/4 c. of cocoa powder, the flour, baking soda, cloves, cinnamon and salt until the mixture is just combined and fold in the zucchini, chocolate chips and walnuts.

Pour batter into 2 well butter 9 inch round cake pans and bake at 350 degrees for 25-30 min. or until tester comes out clean. Let the cake cool in the pans for 10 minutes, turn them out into rack and cool completely.

In a bowl with an electric mixer beat together 1 stick of butter, cream cheese, powdered sugar, and 1 t. of vanilla and the remaining 2 T. of cocoa powder until the mixture is smooth. Invert on of the cake layers onto a plate, spread on third of the frosting on the top and top it with the second layer. Spread remaining frosting onto he top and sides of the cake.

Zucchini Brownies

Sift together:
2 c. flour
1/4 c. cocoa
1 1/2 c. sugar
3/4 t. soda
1 t. salt

Blend in blender:
2 c. grated zucchini
1/2 c. oil
2 t. vanilla
1/2 c. chopped nuts (optional)

Mix wet and dry ingredients.
Grease and flour 9x13 pan
Bake @ 350 for 20-30 min.
Once cooled, top with icing

Peanut Butter Fingers

Mix together:
3/4 c. brown sugar
3/4 c. margarine
3/4 t. baking soda
2 eggs
3/4 c. sugar
3/4 c. peanut butter
1/2 T. vanilla

Add:
1 1/2 c. flour
1 1/2 c. oatmeal (do more oatmeal, so it's not sticky)

Grease a cookie sheet, then spread cookie mixture on it. Bake at 350 until brown on top. About 15-20 minutes.

Sour Cream Sugar Cookies

6 1/2 c. flour
2 t. soda
1 t. salt
1 c. sour cream
1 c. shortening
2 c. sugar
2 eggs
2 t. vanilla

Cream shortening and sugars, add vanilla, then eggs. Add sour cream. Mix well, then add dry ingredients.

Bake @ 350 for about 8 minutes.

Makes a lot.

BBQ Chicken

This is a recipe I figured out recently--it was a fluke. It's super easy and real tasty!

Cook chicken breasts in crockpot, covered with your favorite BBQ sauce til tender.
Just before serving, set the chicken on your outdoor BBQ grill. BBQ both sides for a about 5 min. Put more BBQ sauce on while they're cooking.

Pasta Salad

Rainbow twirly pasta
Cheese
Ham
Carrots
Celery
Cucumber
Olives
Tomatoes
Italian Dressing

Cook entire package of pasta according to directions. Rinse with cold water. Add chopped up stuff (what you like) and top with dressing according to taste. This is fast, easy, and good. We will often eat it as a meal in the summer.

My Favorite Salad Lately

Lettuce or spinach leaves
Strawberries
Craisins
Apples
Cheese
Carrots
Tomatoes
Pecans
Raspberry Walnut Vinaigrette Dressing (I bought Newman's and it's pretty tasty.)

Pretty much everything (except lettuce and dressing) is optional and you can add anything else you like!

Chicken Won Ton Salad

This is one of my favorite stand alone or serve a main course salad.
It's basically done in 3 parts.

1 pkg. won ton noodles, cut in 1 in. lengths & fried. These will be chips to add to the top of your salad. Caution: they cook very fast. You don't want them brown.

Salad
4 chicken breasts cooked, moist & delicious if done in the crock pot with little poultry seasoning.
slivered almonds sauteed in bouillon cube or chicken flavoring
lettuce
red onion
1 can mandarin oranges

Dressing:
1 1/2 t. salt
1/2 c. sugar
2 t. accent
2 t. pepper
1 c. light oil
3/4 c. rice vinegar

Cherry Swirls

or cherry squirrels as my kids would say.

1 1/2 c. sugar
1/2 c. margarine or butter
1/2 c. shortening
4 eggs
3 c. flour
1 1/2 t. baking powder
1 1/2 t. salt
1 t. vanilla
1 t. almond flavoring

Mix all above ingredients. In 9x13 pan, spread 1/2 of the cookie mixture.

Spread:
1 can cherry pie filling on top

Glop the remaining cookie mixture on top of the cherry pie filling in small spoonfuls. Then swirl around--you'll have to work at this as the cookie mixture doesn't swirl easily.

Bake @ 350 degrees for 35-45 minutes.
When cooled, frost with a light glaze frosting of powdered sugar, milk, vanilla, and butter.

Mother's Never Fail Bread

I hear B's been the Betty lately with the bread making. This is the recipe she used. I've tasted it and it's yummy. But I have yet to make some of my own.

This is the whole recipe, 6 loaves

5 1/4 c. hot tap water
2/3 c. oil
2/3 c. honey
2 T. salt
3 T. dry yeast
1/4 c. gluten flour
9 c. whole wheat flour
3 c. white flour

Combine all ingredients except white flour. Let raise to top of bowl. Mix again and add 3 c. white flour or until dough cleans sides of bowl. Knead 6 minutes. Put in pans. Let rise for approximately 20 minutes in warm place. Bake at 350 degrees for 25-30 minutes. Don't over bake.

Honey Butter

Today felt like a chili and scones kind of day. And what goes better with scones than honey butter--from scratch.

1/4 c. butter, softened
1/2 c. honey

Beat together until fluffy, well as fluffy as honey butter's going to get.

Chicken Green Chilie Salad

This is my best attempt at Bajio's Chicken Green Chilie Salad, which I love, but I get ticked off every time I go there and they raise the price another buck. I'm so cheap. So I had an idea to try and see if I could duplicate the flavor and wa la, I think I've got it.

Saute:
1/2 to 1 full diced onion (depends how much you like onions--I love em in meals)
1/2 cube butter
1 can diced green chilies

Add about 1/2 c. brown sugar--you want the mixture to look light brown

Add 2 large cooked chicken breasts cut up or shredded.

You can serve this:
-as a salad with tortilla chips
-on tortillas
-with refried or black beans
-with spanish rice
-topped with sour cream, guacamole, cheese, and salsa.
-the possibilities are endless.

Swedish Meatballs

I tried something new tonight and my family LOVED it! The boys ate at least half of their body weight. :) If you like meatloaf, you will like this.

1 1/2 lbs. ground beef
1/4 c. milk
1 c. bread crumbs or oatmeal (I had a loaf of bread that didn't turn out in my breadmaker, so I blended it, added parsley, garlic salt, onion powder, and seasoning salt and tossed it in a large ziplock bag. It turned out really good.)
1/4 t. pepper
1/2 t. garlic salt
1 egg
1/2 c. chopped onion
1 t. chili powder or taco seasoning

Mix all ingredients and shape into balls about 2 inches in size. Put in baking dish 1 layer flat.

Sauce
1 c. ketchup
1 small can tomato sauce
3/4 c. brown sugar
1 1/2 t. liquid smoke (I didn't have this, but it still tasted great.)

Mix to disolve sugar and pour over raw meatballs. Cook at 350 for 45 minutes. Serve over rice.

Bran Muffins

Grandma Mary's

Mix together:
5 t. baking soda
2 c. boiling water
1 qt. buttermilk

Cream together:
1 c. shortening
1 t. salt
3 c. sugar
4 eggs

Add:
5 c. flour
5 c. bran flakes (cereal)

Pour into prepared muffin cups and or tin and bake @ 400 for 20 minutes. Bake what you want, store the remaining mix in the refridgerator. Do not stir after mixed, just spoon out what is needed. Recipe can be halved.

Lentils

Skip sent me this. It is from a girl in her ward. Looks like a really good food storage meal. I'll try it out for ya'all and tell you all about it.

2 tsp. oil
1/2 cup diced onion
1/2 cup diced celery
1/2 cup diced carrots
1 lb. lentils sorted and rinsed
1 can chicken or vegetable broth
1 tsp. cumin

In a LARGE skillett, saute onion, celery and carrots in the oil for 5 minutes on medium-high heat. Add rinsed lentils, cumin and then enough broth to cover. Once the broth comes to a boil, reduce heat to med or med-low and simmer for 45 minutes - hour only stirring once or twice. If you over stir, the lentils break up. Add salt and pepper to taste. It doesn't look appetizing, the color seems all wrong, but my kids love it, and they get excited for the leftovers, (the flavors intensify overnite, and it seems even better the next day).

Yummy Potatoes

2 lb. bag southern style hashbrowns
1 pt. sour cream
1/2 c. margerine or butter
1 can cream of chicken soup
1/2 c. chopped onions
1 1/2 c. shredded cheese
salt & pepper

Mix altogher. Top with corn flakes. Bake in 350 degree oven for 45 min.

Fried Rice


I've tried this meal several times and failed miserably. But this week I conquered. So here's what I learned. Don't use Calrose rice for fried rice--I love it for everything else. Also, make sure your rice is completely cooled before frying.


Saute:
2 T. Butter
Chopped Onion
Add 1 or 2 eggs and scramble.

Add
cooked, cooled rice (I used brown rice--D-lish)
2 T. Soy Sauce
Flip it, turn it--feel like a chef

Add your veggies--frozen work great!
-carrots
-peas
-green onions
-mushroom
-green beans
-sky's the limit!

Chicken Ole

Chicken -- fresh or bottled
1 can Black Beans (optional)
1 can Tomato Sauce
1 can Corn
1 can Chopped Green Chilies or substitute with a 1/2 c. Salsa
1 1/2 t. Chili Powder
1 t. Onion Powder
Tortilla Chips or Cooked Rice

Cook Chicken in skillet. Add other indredients. Serve over chips or rice.

Garnish with Cheese and Sour cream.

I made this tonight. My kids all gave it a thumbs up--Wahoo!
I added the black beans, the recipe didn't call for them. I used Salsa instead of Green Chilies. It had a good flavor and I was thinking that you could probably try it without the chicken for a bean and rice type of recipe. Easy Smeasy Recipe

Sloppy Joes

This was really delicious. You can double this and freeze it in 1 c. portions to use it in tacos, soup, or casseroles. (I got it from a friend who does the Once a Month cooking thing)

1 lb. ground beef
1/2 c. chopped onion (or minced onion)
1/3 c. ketchup
1/2 c. water--may need more to dilute at the end.
1 T. lemon juice
1 T. brown sugar
1 t. Worchestershire sauce
1 t. salt
1 t. vinegar
1/2 packet sloppy joe seasoning (if desired)

What to do with that leftover rice in the fridge? Add it to your sloppy joe or taco meat. It stretches your meet further and tastes great too.

Strawberry-Banana Jello Salad

Mix together:
3-3 oz. pkgs. Strawberry Jello
2 1/4 c. boiling water

Add:
1 c. crushed pineapple
20 oz. frozen strawberries (sliced are best)
3 smashed bananas

Mix all above ingredients together well, then pour half of mixture into a pan and let set in refrigerator. Leave the other half of the Jello mixture on the counter.

Once set, take out of fridge, and spread 8 oz. sour cream on top.

Then pour the rest of the Jello mixture on top.

Keep Refrigerated

Chicken Taco Soup

Here's a twist on our traditional taco soup and my fam loves it

2 to 4 boneless, skinless chicken breasts
1 cup chicken broth
1 cup salsa
1 can corn, drained
1 can black beans, drained (15 oz)
1 pkg taco seasoning
1/2 cup grated cheddar cheese

Place everything but sour cream and cheese in the crockpot. Cook on low heat 6-8 hours or high heat 3-4 hours. Shred the chicken or cut into cubes and add the sour cream and cheese when you're about to eat. Serve with fritos. Yummy!

Coconut Pecan Frosting

Since Mom's birthday is tomorrow, I thought I'd put this recipe on the blog since she loves German Chocolate Cake.

1/2 cup evaporated milk (12 oz can)
1 1/2 cup sugar
4 slightly beaten egg yolks
3/4 cup butter/margarine
1 1/2 tsp vanilla
7 oz coconut
1 1/2 cup chopped pecans.

Combine ingredients and put in saucepan. Cook and stir over medium heat until thickened about 10-12 minutes. Remove from heat, stir in coconut and pecans. Cool then apply to cake.

When I make this, I just use all of the can of evaporated milk. My family likes more coconut and I usually only put in about 1/2 cup of the finely chopped pecans. It's quite tasty and as you can see really healthy for you. ;)

Chicken Noodle Soup

Homemade Noodles:

1 beaten egg
2 TBSP mild
1/2 tsp. salt
1 cup flour

Combine egg, salt, and milk. Add enough flour to make a stiff dough. Roll very thin on floured surface. Let stand 20 minutes. Then cut 1/8 in. thick. Let dry for 2 hours. Boil for 10 minutes.

Soup:
1 large onion
3 stalks celery
3 carrots
3 chicken breasts
1/8 tsp. pepper
1 tsp salt
2 cups water
1/2 tsp basil

In above order put in pot. Bring to a boil turn down and simmer for 30 min to 1 hour (until veggies are soft)

When I made this, I added more water at the end that was flavored with chicken stalk. It was really yummy with a lot of flavor.

Blender Pancakes

From Aunt Marilyn

1 cup whole grain wheat (not flour)
1 cup milk
Combine in blender and mix on high speed for 2 full minutes
Add 3/4 cup milk and blend 2 more minutes

Add:
2 eggs
1/3 cup oil
1 tsp. salt
1 tsp. cinnamon
1 Tb. honey
Blend well. Just before cooking add 1 Tb. baking powder.

Breakfast Cookies

from the kitchen of Malia



2 cups old fashioned oats

1 ¼ cups whole wheat flour

1 cup white flour

1 cup grape nuts cereal

½ cup wheat germ

½ cup oat bran

2 teaspoons baking soda

2 cups unsalted butter, room temperature

2 large eggs

1 cup brown sugar, packed

½ cup sugar

½ cup raisins

1 tablespoon vanilla

1 cup almonds, toasted coarsely chopped (substituted for the least expensive nuts)

1 cup chopped pitted dates, optional*

Cream butters and then add remaining ingredients in order. Roll into balls and bake at 350-375 degrees for 6-7 minutes or until lightly browned.

72 Hour Kit--Day 3

Water...

Just one today, aren't you glad. I found a case of water bottles on sale at Macey's for $2.99. That's why I added it today. In the summer especially, I try to keep a case of water bottles in the car at all times.

A good idea from our R.S. Pres. is to fill 2 liter soda pop bottles with water--once you've drank the good stuff and cleaned them. Then tie the two of them together with a shoe lace, or something similar. That way if you have to you can throw them over your shoulders and carry more stuff or have your hands free.

Any more ideas?

Pancakes

1 egg
1 c. flour
3/4 c. milk
2 T. melted shortening or oil
1 T. sugar
3 t. baking soda
1/2 t. salt

Makes 9 four inch pankcakes

For whole wheat pankcakes, subsitute whole wheat flour for white flour and packed brown sugar for white sugar.

These are yummy! Mom made them for us this weekend when we were up. She used whole wheat and they were delicious and filling.

Crockpot Chicken

1 packet dry Italian seasoning
1 can cream of chicken soup
1 8 oz. pkg cream cheese
1/2 can milk
chicken breasts (as many as you need)

Put chicken breasts in crockpot and sprinkle seasoning over top. Let it cook for a few hours. Combine all the other ingredients in a saucepan and stir until creamy. Pour over chicken and cook a little longer. Serve over rice.

A Twist on Chocolate Cake

This is super easy and one of my fams favorites!

1 box Devil's Food Cake Mix
1 pkg cream cheese
1 egg
1/2 cup sugar
chocolate chips

Mix cake according to directions on the box. In a separate bowl mix cream cheese, egg, and sugar together. In a 9x13 pan pour 2/3 of cake mix in pan. Pour cream cheese mixture on top and sprinkle chocolate chips on top of that (I use about 2/3 of a pkg). Pour remaining cake mix on top.

Bake at 350 for 25-35 minutes. No need to frost and you've got some yummies inside.

I heard on HGTV that a little baking soda and vinegar will shine your stainless steel sink right up. So I put it to the test on my soap scummy tub. With a scouring pad and the two ingredients. It came right off. Pretty cool chemical reaction too!

Gerb's Cake for Breakfast

Oatmeal Cake
1 cup applesauce (you can use oil instead)
1 cup sugar
4 eggs
6 cups oats
4 tsp. baking powder
1 tsp. salt
2 tsp. cinnamon
2 cups milk(optional add-ins before baking: 1 diced apple, 1 cup fresh or frozen blueberries)

Combine all ingredients and pour into a greased 9x13 pan. Bake at 375 for 35 minutes (or until lightly browned).You can serve each slice 'as is' (perfect to eat on the way out the door!) or in a variety of other ways. Here are a few ideas:-Pour some milk over it and enjoy-Top with brown sugar and butter-Whipped cream and fresh fruit make anything taste amazing!-Dust the top with powdered sugarThere you have it. Cake for breakfast.Oh, yeah.

Maple Syrup

1 c. boiling water
1 c. sugar
1 t. mapleine flavoring

Stir sugar into boiling water and stir til dissolved. Serve on pancakes, waffles, french toast, or whatever you please.

Chicken Soft Tacos

I love crockpot recipes and here is one even my kids like.

4 boneless, skinless chicken breasts
1 16oz jar salsa
1 c. sour cream
flour tortillas

Spray crockpot with non-stick cooking spray. Put in chicken with salsa on top. Cook on high 6-8 hours or low 10-12 hours. Mix in sour cream the last hour. Shred chicken. Fold into warm tortillas with lettuce and grated cheese.

Look what I did with a ROAST

Growing up I hated having roasts for dinner. As a mom, they're the greatest ever. Just put them in the crock pot and let 'em go. One roast usually does a couple of meals.

Cooking the Roast:
I prefer the slow cooker, but you can you a roasting pan in the oven as well. Plan 4-6 hours to cook a good sized roast from frozen to fully cooked. I like to smother the roast with salt, pepper, garlic salt, minced onion, herbs. Pretty much whatever I can find in my spice shelf that sounds good that day.

Once cooked, here's some of my favorite options:

1. Sunday Dinner Roast, Mashed Potatoes and Gravy, Salad, etc.

2. French Dip Sandwiches: Put sliced beef on hoagie buns or rolls. Mix up a packet of Au Juis for the dip. You can also just use beef bouillon of beef flavoring to make your own dip.

3. BBQ Beef Sandwiches: Pour a half a bottle of BBQ sauce over the shredded beef, and serve on a roll or hoagie bun.

4. Stew: Use left over roast to make a stew with onion, potatoes, and carrots. For flavoring use beef bouillon and a little flour or a packet of Stew Seasoning.

Hint: Because I'm always running late on Sunday and I don't like spending my whole day cooking, I cook my roast on Saturday and have it for Saturday evening meal. That way, when we come home from church, I just have to pull a few things together or have leftovers from the night before. When I think ahead to do this, it makes my Sunday meal preparation much more enjoyable.

Taco Soup

This is my favorite recipe. It is so easy and takes 5 mintues, really!

1 can chili beans
1 can corn
1 can tomatoes
1 can tomoato sauce
1 small can water
taco seasoning to taste (1/3 cup?)

Top with cheese, sour cream, and fritos.

(The man couldn't even tell it didn't have meat until I told him!)

Pizza Pockets

Make some dough or use rhodes and let it rise like you are making rolls.

Flatten out dough (the size of a roll)

Put whatever you'd like on it (we do pepperoni and cheese)
Bring the ends together.

Bake until browned.

We serve it with spaghetti sauce on the side. The kids dip their pizza pocket into the sauce.

It's yummy and a family favorite. You can have the kids help and put whatever veggies they'd like in their pizza.

Whole Wheat Bread or Rolls

I made this recipe last night when we made pizza pockets. I used the remaining dough and made cinnamon rolls. It's quite healthy (unless you make cinnamon rolls and put all the sugar stuff on)

2 tbsp yeast
2 cups lukewarm water (16 oz)
1/4 cup honey
3/4 cup olive oil
2 eggs
6 cups whole wheat flour
2 tsp. salt

Dissolve yeast in water and honey for about 10-15 min. Place all ingredients in bowl (I use the bosch) Knead until it loosens from sides of the bowl. Let rise until double. Bake at 375 degrees until browned.

Pepper Steak

This isn't quite a food storage recipe, but I used the Elk Backstrap meat and it was quite yummy, so I thought I'd share.

In a crockpot throw the following in:
1 1/2 - 2 lbs round steak (1 pkg elk backstrap)
1/4 cup soy sauce
1 cup chopped onions or 1 TBSP dehy. onion
1 clove garlic or 1/4 t garlic powder
1 tsp sugar
1/2 tsp salt
1/4 tsp pepper
1/4 tsp ground ginger
4 tomatoes or 1 14 oz can tomatoes
2 large green pepper (sliced)'

Cook 5-6 hours or until meat is tender

We serve this over rice!

Yummy Pumpkin Cake

A recipe from Skip's friend. Thanks!

1 yellow cake mix
1 cube margarine
Mix together to make a crust.

Put into 9x13 inch pan all of the crust except for 1 cup. Set aside.

1 small can pumpkin
2 beaten eggs
3/4 c sugar
2 tsp pumpkin pie spice
1 3/4 c. evaporated canned milk (13 oz)

Mix the above ingredients together then add the canned milk last and mix.
Pour over the crust you made earlier.

Add to the 1 cup crust mixture the following
1/2 c. sugar
1 TBSP Butter
Mix together until crumbly, sprinkle over the top.

Bake 1 hour at 350.
Serve with cool whip or whip cream

(She didn't have pumpkin pie spice so instead she used 1 tsp cinnamon, 1/2 tsp cloves and 1/2 tsp nutmeg and only cooked it for 50 minutes)

Apple Crisp

Greese 9x9 pan
Line with fresh or canned apples. (Any other fruit will work as well)
Sprinkle with 2 T. sugar

Topping:
1/2 c. oats
1/2 c. brown sugar
1/4 c. flour
Mix together
Melt 1/4 c. butter or margarine and mix into the oat mixture.
1/2 c. chopped nuts or coconut (optional)

Sprinkle on top of apples and cook on 375 for 25-30 min.

Chicken & Alfredo

This was a really yummy way to add a lot of flavor to a simple meal. However, you do have to plan ahead.

In a crock pot cook chicken breasts. I cooked 3 large chicken breasts, and we still had leftovers. (6 people) As soon as you put the chicken in the crock pot,
Put about 1/2 c. water in with the chicken. Make sure there's a little water for the entire cooking process, so that it doesn't burn. Especially if your cooking your frozen chicken on high. (Like I usually do)
Season with whatever Italian seasonings are in your cupboard. I use Italian Seasoning Blend, Garlic & Herb, & Minced Onion.
Let cook for 3-4 hours. When the chicken pulls apart easily it's done.

Boil Alfredo noodles or Spaghetti noodles til cooked thoroughly. Nothing like not entirely cooked pasta.

1 or 2 Alfredo Seasoning Packets: Cook up according to directions. All you need to add is milk and then stir and boil.

Mix altogether and wala.

Chicken & Rice

This one was from Skip...

Steam rice and veggies in rice cooker. Add chicken bouilon to rice for flavor.
In frying pan warm 1 bottle canned chicken
Season with Worcestershire Sauce, Soy Sauce, and All Seasoning.
Serve altogether.

Tin Foil Dinners

Ground Burger, uncooked & patted into patties
Carrots, peeled and chopped, or dehydrated from the family cannery. Just rehydrate them by
adding water and letting them sit for 20 min.
Potatoes, peeled and sliced
Onion, sliced, I use minced onion when I don't have fresh

Put one patty on a square of tin foil. Top with the remaining ingredients to your liking. Salt and pepper, then fold tin foil up and pinch together. Cook at 350 for 1 hour.

Bisquits & Gravy

Bisquick: that's right all you need is Bisquick and milk. I follow the directions for biscuits on the box.

Gravy: 1 pkg. country gravy mix. Follow directions on the package. I buy these when they're on sale 4 for $1. For variety add sausage.

Cook up some eggs, or slice some oranges and wala breakfast for dinner.

Cleone's Bread

Makes 2 loaves:
2 1/2 c. warm water
3/4 c. sugar
2 T. yeast
Mix altogether til bubbles (15 min.)

Add:
1/4 c. oil
1 T. salt
6 c. flour ... I use 5 c. white wheat and 1 c. white flour

Knead:
In Bosch let run for 5 min.
By hand 20 min.

Let dough raise til it nears the top of your Bosch bowl. You can punch down and let raise again, but I never do.

To make the 1st loaf, take half of the dough and pound it out flat on the counter with your hands. Roll it up (form it to look like a loaf) and pinch the end together with the rest of the loaf. Place in greased bread loaf pans. I just spray with Pam. Once in the bread pan, pound down the loaf with your fist to get all the air bubbles out. Then let raise until it has doubled in size.

Bake at 350 for 20-25 min.


Measurements for 4 loaves:
4 T. yeast
5 c. warm water
1 1/2 c. sugar
Mix together til bubbles
Add 1/2 c. oil
2 T. salt
12 c. flour

Then follow same directions as for 2 loaves.

Hints:
Never put salt directly onto yeast mixture. Always make a pocket in the flour to drop the salt into.
If bread isn't rising because your house is cold, turn on the oven to preheat and set bread ontop of the burners, make sure they are turned off. (The heat from the oven will come up and the bread will rise faster).
When you pound out your bread loaves on the counter use about a T. of oil. Your bread won't stick and it'll come out all pretty and shiny looking.

Fajitas or Tacos

Heat in a frying pan:
1 bottle canned chicken ... you can also use fresh chicken, cooked & shredded
1 pkg. fajita mix or taco seasoning ... depending what your in the mood for

Heat in saucepan:
Refried Beans ... I buy dehydrated ones from the family cannery--yummy too.

Spanish Rice: cooked in rice cooker or in saucepan
1 c. rice
3 c. water
1 t. salt
1/2-3/4 c. salsa

Serve with: chips, hard shell tacos or tortillas.

Top with: sour cream, cheese, lettuce, etc.

Variation: Use Beef Steaks or Elk Steaks: Cook in crock pot with seasonings, cut in strips when cooked thoroughly. Then saute green pepper and onion. Mix altogether with fajita seasoning.

Peach Cobbler

Put 2 cups peaches in a circular or square 8x8 pan or casserole dish. (I use a large can of peaches and drain most of the juice.)
Sprinkle 1/2 t. cinnamon, 2 T. sugar, & 2 T. flour on top of peaches.

Next, mix in seperate bowl:
2 c. flour
4 t. baking powder
1 t. salt
2/3 c. sugar
3/4 c. shortening or oil
add milk til mixture reaches a pancake consistancy.

Pour mixture on top of peaches in pan and bake at 375 for 35-45 min. Until top is lightly browned and fork comes out clean.

Sweet Rice

3 c. water
1 c. rice
1/4 c. sugar
1 t. salt

Combine all ingredients in saucepan. Turn range to high and let water start boiling. As soon as it boils, turn it to med-low, cover and let simmer til rice is no longer hard.
Hint: An easy way to cook rice--get a rice cooker--I have an Aroma and I love it!

Makes: 3-1 c. servings, I double this recipe for my family of 6.

Oatmeal

3 c. water
1 c. oatmeal
1/4 c. sugar
1 t. salt

Put all together in a saucepan and turn up til boiling. Stir occasionally til thick. Serve with milk on top. For variety add raisins or dehydrated apples from the Family Cannery, while cooking.

Makes: 3-1 cup servings, for a family of 6 I double it.
