Fajitas Seasoning

2 Tbs. fresh lime juice
6 cloves of garlic, minced
1 1/2 tsp. chile powder
1/4 cup brown sugar, packed
1 tsp. italian seasoning
1 jalapeno, seeded, and minced
3/4 tsp. salt

Mexican Rice

Blend in blender:
1/3 c. onion
2-3 garlic cloves
2-3 tomatoes

Brown 2 c. rice in a little oil.

Add tomato sauce.
Let it boil & cover or simmer on low. 25 min-ish.

*The trick to Mexican rice is to not add too much water. Then it gets all sticky and mushy.

Refried Beans

Blend in Blender:
Onion
Garlic cloves
Pinto or Black Beans

Fry in frying pan with 3 T. oil. or so

Guacamole

3 avacados, slice and scoop them out. (How to pick a good avacado--still green)
Jalapeno or Serrano or both
tomatillos (When you add a tomatillo, it doesn't brown as fast)
clove garlic
onion, thick sliced wedge
cilantro (handful)
water (1/2 c.)
Blend in blender
Roll lemon to release juices. Squeeze 1/2 lemon into it.
Add 1 t. salt

Fresh Green Salsa

5-6 roasted, tomatillos
1/4 onion
2 garlic cloves, depends on size of cloves
jalapenos or serranos
cilantro (handful)
little water
Blend in blender
Stir in 1 t. salt

Fresh Red Salsa

3 roasted, red tomatoes
2 jalapenos or serranos
1/4 onion
1-2 garlic cloves
Blend altogether in blender
Stir in 1 t. salt

To roast tomatoes, cook on stoves top on an iron skillet, or similar.
Add more or less of each ingredient, depending on your taste.

Lemonade

1 c. freshly squozen lemon juice (about 3 lemons)
3/4 c. sugar
Fill blender with water & ice, no more than 6 c. total ingredients
Blend in Blender

Peanut Butter Cookies (cake mix)

1 yellow cake mix
2 eggs
1/3 c. water
1 c. peanut butter

Mix together. Put into balls on cookie sheet. Bake 350 for 10-12 min.

Taco Soup

Brown:
1 lb. ground beef
onion

Add:
1 can chili beans w/ liquid
1 can kidney beans w/ liquid
1 can corn w/ liquid
1 8 oz. can tomato sauce
2 c. water
2 cans peeled & diced tomatoes
1 4 oz. can chopped green chili peppers
1 pkg. taco seasoning

Serve with:
Shredded cheese, Sour Cream, & Fritos

Chicken & Rice Soup

Chicken, cooked & shredded
Water, enough to cover the chicken & then some.
1/2 c. rice
small bunch Spagetti noodles broken into 1" pieces.
Chicken boullion
Cream of Chicken soup
Parsley
Garlic
Veggies, carrots, beans, peas, corn, onions, etc.
Salt & Pepper to taste

Marshmallow Popcorn

1/2 c. butter
1/2 c. brown sugar
1 pkg marshmallows
popcorn around 2 cups popped

Melt butter with brown sugar on a low to med heat, until sugar is disolved. Melt marshamallows pour over popcorn.
Super easy and fast. I was also thinking you could pour this over puffed rice and do a puffed rice ball with this recipe.

Spicy Tomatillo Ranch Dressing

I think Michelle already posted this and it's probably the same recipe, but here it is too so that all the Cafe Rio stuff is together. :)

1 paket Hidden Valley Buttermilk Ranch dressing
2 cups mayonaise
2 tomatillos (peel off loose skin)
2 cups buttermilk
1 clove garlic
1/2 bunch cilantro (mostly leaves)
1/2 - 1 small jalapeno pepper (to your taste)
2 tsp lime juice

Blend ingredients in blender and refrigerate.

Cafe Rio Pork

3 lbs pork roast
1 can Pepsi, Coke, or Dr. Pepper

Cook all day in crock pot. Drain liquid and shred pork. (The soda make the pork really tender and it shreds easily)

After you have shred the pork, return to crock pot and add:
1/4 cup BBQ sauce
1/4-1/2 cup brown sugar (I add 1/2 cup because I like it sweet)
1 can mild chillies
3/4 cup ketchup
1 tsp garlic salt

Mix into pork. I cook it a little longer just to let the flavors mix. This is way yummy!

Cafe Rio Chicken

10 lbs chicken
6 cloves garlic, minced
2 TBSP cumin
1-2 TBSP chili powder
2 small bottles zesty italian dressing

Combine all and cook on low all day in crockpot, shred

(I fourthed the recipe and it still made oodles for my family. In fact I have frozen it for another meal)

Cafe Rio's Cilantro Lime Rice

1 cup rice
1/2 chopped onion
1 TBSP oil
2 cups chicken broth
1/3 bunch cilantro
1/2 tsp salt
zest of a lime

Brown onion and rice in oil. In blender, combine chicken broth, cilantro, lime zest, and salt. Blend thoroughly. Add to rice and bring to a boil, reduce heat and simmer 20 minutes. When rice is cooked, fluff with a fork and add juice of 1 lime (microwave lime for 20 seconds first..easier to juice). (I just cut a lime up in wedges and let it simmer with the rice, then I just remove the lime when the rice is done)

Cafe Rio's Black Beans

4-6 cans black beans
1 can diced chillies
1 1/2 cup green enchilada sauce

Place all ingredients in crockpot, saucepan, or skillet. Cook 2 hours on low. (I use my electric skillet, put the lid on and let it simmer since I use the crock for the pork)

Italian Chicken

4 frozen chicken breasts
1envelope Italian salad dressing mix
1 can cream of chicken soup OR--- 1 can of chicken broth.

I used 1 can of chicken broth for a lighter version instead of the soup and it turned out really good.
I also served this over rice.

Cook 8-10 hours on low or 4-5 hours on high in crock pot.

Crock Pot Recipe

I have been loving the crock pot recently. Especially with a little baby and feeling like I have no time. Ha just wait till I have more than one kid then I really won't know what to do. So here is a few recipe's I have tried and they are so good.

Creamy Chicken Tacos

4 frozen chicken breasts
8 oz salsa

Cook this on high for 6 hours or on low for 8-10 hours. During the last hour of cooking shred chicken with fork and put 1 cup of sour cream, mix together.

Put on tortillas and top with cheese and lettuce.
