Chicken Soft Tacos

I love crockpot recipes and here is one even my kids like.

4 boneless, skinless chicken breasts
1 16oz jar salsa
1 c. sour cream
flour tortillas

Spray crockpot with non-stick cooking spray. Put in chicken with salsa on top. Cook on high 6-8 hours or low 10-12 hours. Mix in sour cream the last hour. Shred chicken. Fold into warm tortillas with lettuce and grated cheese.

Look what I did with a ROAST

Growing up I hated having roasts for dinner. As a mom, they're the greatest ever. Just put them in the crock pot and let 'em go. One roast usually does a couple of meals.

Cooking the Roast:
I prefer the slow cooker, but you can you a roasting pan in the oven as well. Plan 4-6 hours to cook a good sized roast from frozen to fully cooked. I like to smother the roast with salt, pepper, garlic salt, minced onion, herbs. Pretty much whatever I can find in my spice shelf that sounds good that day.

Once cooked, here's some of my favorite options:

1. Sunday Dinner Roast, Mashed Potatoes and Gravy, Salad, etc.

2. French Dip Sandwiches: Put sliced beef on hoagie buns or rolls. Mix up a packet of Au Juis for the dip. You can also just use beef bouillon of beef flavoring to make your own dip.

3. BBQ Beef Sandwiches: Pour a half a bottle of BBQ sauce over the shredded beef, and serve on a roll or hoagie bun.

4. Stew: Use left over roast to make a stew with onion, potatoes, and carrots. For flavoring use beef bouillon and a little flour or a packet of Stew Seasoning.

Hint: Because I'm always running late on Sunday and I don't like spending my whole day cooking, I cook my roast on Saturday and have it for Saturday evening meal. That way, when we come home from church, I just have to pull a few things together or have leftovers from the night before. When I think ahead to do this, it makes my Sunday meal preparation much more enjoyable.

Taco Soup

This is my favorite recipe. It is so easy and takes 5 mintues, really!

1 can chili beans
1 can corn
1 can tomatoes
1 can tomoato sauce
1 small can water
taco seasoning to taste (1/3 cup?)

Top with cheese, sour cream, and fritos.

(The man couldn't even tell it didn't have meat until I told him!)

Pizza Pockets

Make some dough or use rhodes and let it rise like you are making rolls.

Flatten out dough (the size of a roll)

Put whatever you'd like on it (we do pepperoni and cheese)
Bring the ends together.

Bake until browned.

We serve it with spaghetti sauce on the side. The kids dip their pizza pocket into the sauce.

It's yummy and a family favorite. You can have the kids help and put whatever veggies they'd like in their pizza.

Whole Wheat Bread or Rolls

I made this recipe last night when we made pizza pockets. I used the remaining dough and made cinnamon rolls. It's quite healthy (unless you make cinnamon rolls and put all the sugar stuff on)

2 tbsp yeast
2 cups lukewarm water (16 oz)
1/4 cup honey
3/4 cup olive oil
2 eggs
6 cups whole wheat flour
2 tsp. salt

Dissolve yeast in water and honey for about 10-15 min. Place all ingredients in bowl (I use the bosch) Knead until it loosens from sides of the bowl. Let rise until double. Bake at 375 degrees until browned.

Pepper Steak

This isn't quite a food storage recipe, but I used the Elk Backstrap meat and it was quite yummy, so I thought I'd share.

In a crockpot throw the following in:
1 1/2 - 2 lbs round steak (1 pkg elk backstrap)
1/4 cup soy sauce
1 cup chopped onions or 1 TBSP dehy. onion
1 clove garlic or 1/4 t garlic powder
1 tsp sugar
1/2 tsp salt
1/4 tsp pepper
1/4 tsp ground ginger
4 tomatoes or 1 14 oz can tomatoes
2 large green pepper (sliced)'

Cook 5-6 hours or until meat is tender

We serve this over rice!

Yummy Pumpkin Cake

A recipe from Skip's friend. Thanks!

1 yellow cake mix
1 cube margarine
Mix together to make a crust.

Put into 9x13 inch pan all of the crust except for 1 cup. Set aside.

1 small can pumpkin
2 beaten eggs
3/4 c sugar
2 tsp pumpkin pie spice
1 3/4 c. evaporated canned milk (13 oz)

Mix the above ingredients together then add the canned milk last and mix.
Pour over the crust you made earlier.

Add to the 1 cup crust mixture the following
1/2 c. sugar
1 TBSP Butter
Mix together until crumbly, sprinkle over the top.

Bake 1 hour at 350.
Serve with cool whip or whip cream

(She didn't have pumpkin pie spice so instead she used 1 tsp cinnamon, 1/2 tsp cloves and 1/2 tsp nutmeg and only cooked it for 50 minutes)

Apple Crisp

Greese 9x9 pan
Line with fresh or canned apples. (Any other fruit will work as well)
Sprinkle with 2 T. sugar

Topping:
1/2 c. oats
1/2 c. brown sugar
1/4 c. flour
Mix together
Melt 1/4 c. butter or margarine and mix into the oat mixture.
1/2 c. chopped nuts or coconut (optional)

Sprinkle on top of apples and cook on 375 for 25-30 min.

Chicken & Alfredo

This was a really yummy way to add a lot of flavor to a simple meal. However, you do have to plan ahead.

In a crock pot cook chicken breasts. I cooked 3 large chicken breasts, and we still had leftovers. (6 people) As soon as you put the chicken in the crock pot,
Put about 1/2 c. water in with the chicken. Make sure there's a little water for the entire cooking process, so that it doesn't burn. Especially if your cooking your frozen chicken on high. (Like I usually do)
Season with whatever Italian seasonings are in your cupboard. I use Italian Seasoning Blend, Garlic & Herb, & Minced Onion.
Let cook for 3-4 hours. When the chicken pulls apart easily it's done.

Boil Alfredo noodles or Spaghetti noodles til cooked thoroughly. Nothing like not entirely cooked pasta.

1 or 2 Alfredo Seasoning Packets: Cook up according to directions. All you need to add is milk and then stir and boil.

Mix altogether and wala.

Chicken & Rice

This one was from Skip...

Steam rice and veggies in rice cooker. Add chicken bouilon to rice for flavor.
In frying pan warm 1 bottle canned chicken
Season with Worcestershire Sauce, Soy Sauce, and All Seasoning.
Serve altogether.

Tin Foil Dinners

Ground Burger, uncooked & patted into patties
Carrots, peeled and chopped, or dehydrated from the family cannery. Just rehydrate them by
adding water and letting them sit for 20 min.
Potatoes, peeled and sliced
Onion, sliced, I use minced onion when I don't have fresh

Put one patty on a square of tin foil. Top with the remaining ingredients to your liking. Salt and pepper, then fold tin foil up and pinch together. Cook at 350 for 1 hour.

Bisquits & Gravy

Bisquick: that's right all you need is Bisquick and milk. I follow the directions for biscuits on the box.

Gravy: 1 pkg. country gravy mix. Follow directions on the package. I buy these when they're on sale 4 for $1. For variety add sausage.

Cook up some eggs, or slice some oranges and wala breakfast for dinner.

Cleone's Bread

Makes 2 loaves:
2 1/2 c. warm water
3/4 c. sugar
2 T. yeast
Mix altogether til bubbles (15 min.)

Add:
1/4 c. oil
1 T. salt
6 c. flour ... I use 5 c. white wheat and 1 c. white flour

Knead:
In Bosch let run for 5 min.
By hand 20 min.

Let dough raise til it nears the top of your Bosch bowl. You can punch down and let raise again, but I never do.

To make the 1st loaf, take half of the dough and pound it out flat on the counter with your hands. Roll it up (form it to look like a loaf) and pinch the end together with the rest of the loaf. Place in greased bread loaf pans. I just spray with Pam. Once in the bread pan, pound down the loaf with your fist to get all the air bubbles out. Then let raise until it has doubled in size.

Bake at 350 for 20-25 min.


Measurements for 4 loaves:
4 T. yeast
5 c. warm water
1 1/2 c. sugar
Mix together til bubbles
Add 1/2 c. oil
2 T. salt
12 c. flour

Then follow same directions as for 2 loaves.

Hints:
Never put salt directly onto yeast mixture. Always make a pocket in the flour to drop the salt into.
If bread isn't rising because your house is cold, turn on the oven to preheat and set bread ontop of the burners, make sure they are turned off. (The heat from the oven will come up and the bread will rise faster).
When you pound out your bread loaves on the counter use about a T. of oil. Your bread won't stick and it'll come out all pretty and shiny looking.

Fajitas or Tacos

Heat in a frying pan:
1 bottle canned chicken ... you can also use fresh chicken, cooked & shredded
1 pkg. fajita mix or taco seasoning ... depending what your in the mood for

Heat in saucepan:
Refried Beans ... I buy dehydrated ones from the family cannery--yummy too.

Spanish Rice: cooked in rice cooker or in saucepan
1 c. rice
3 c. water
1 t. salt
1/2-3/4 c. salsa

Serve with: chips, hard shell tacos or tortillas.

Top with: sour cream, cheese, lettuce, etc.

Variation: Use Beef Steaks or Elk Steaks: Cook in crock pot with seasonings, cut in strips when cooked thoroughly. Then saute green pepper and onion. Mix altogether with fajita seasoning.

Peach Cobbler

Put 2 cups peaches in a circular or square 8x8 pan or casserole dish. (I use a large can of peaches and drain most of the juice.)
Sprinkle 1/2 t. cinnamon, 2 T. sugar, & 2 T. flour on top of peaches.

Next, mix in seperate bowl:
2 c. flour
4 t. baking powder
1 t. salt
2/3 c. sugar
3/4 c. shortening or oil
add milk til mixture reaches a pancake consistancy.

Pour mixture on top of peaches in pan and bake at 375 for 35-45 min. Until top is lightly browned and fork comes out clean.

Sweet Rice

3 c. water
1 c. rice
1/4 c. sugar
1 t. salt

Combine all ingredients in saucepan. Turn range to high and let water start boiling. As soon as it boils, turn it to med-low, cover and let simmer til rice is no longer hard.
Hint: An easy way to cook rice--get a rice cooker--I have an Aroma and I love it!

Makes: 3-1 c. servings, I double this recipe for my family of 6.

Oatmeal

3 c. water
1 c. oatmeal
1/4 c. sugar
1 t. salt

Put all together in a saucepan and turn up til boiling. Stir occasionally til thick. Serve with milk on top. For variety add raisins or dehydrated apples from the Family Cannery, while cooking.

Makes: 3-1 cup servings, for a family of 6 I double it.
