This is one of my favorite stand alone or serve a main course salad.
It's basically done in 3 parts.
1 pkg. won ton noodles, cut in 1 in. lengths & fried. These will be chips to add to the top of your salad. Caution: they cook very fast. You don't want them brown.
Salad
4 chicken breasts cooked, moist & delicious if done in the crock pot with little poultry seasoning.
slivered almonds sauteed in bouillon cube or chicken flavoring
lettuce
red onion
1 can mandarin oranges
Dressing:
1 1/2 t. salt
1/2 c. sugar
2 t. accent
2 t. pepper
1 c. light oil
3/4 c. rice vinegar

Cherry Swirls
or cherry squirrels as my kids would say.
1 1/2 c. sugar
1/2 c. margarine or butter
1/2 c. shortening
4 eggs
3 c. flour
1 1/2 t. baking powder
1 1/2 t. salt
1 t. vanilla
1 t. almond flavoring
Mix all above ingredients. In 9x13 pan, spread 1/2 of the cookie mixture.
Spread:
1 can cherry pie filling on top
Glop the remaining cookie mixture on top of the cherry pie filling in small spoonfuls. Then swirl around--you'll have to work at this as the cookie mixture doesn't swirl easily.
Bake @ 350 degrees for 35-45 minutes.
When cooled, frost with a light glaze frosting of powdered sugar, milk, vanilla, and butter.

Mother's Never Fail Bread
I hear B's been the Betty lately with the bread making. This is the recipe she used. I've tasted it and it's yummy. But I have yet to make some of my own.
This is the whole recipe, 6 loaves
5 1/4 c. hot tap water
2/3 c. oil
2/3 c. honey
2 T. salt
3 T. dry yeast
1/4 c. gluten flour
9 c. whole wheat flour
3 c. white flour
Combine all ingredients except white flour. Let raise to top of bowl. Mix again and add 3 c. white flour or until dough cleans sides of bowl. Knead 6 minutes. Put in pans. Let rise for approximately 20 minutes in warm place. Bake at 350 degrees for 25-30 minutes. Don't over bake.

Honey Butter
Today felt like a chili and scones kind of day. And what goes better with scones than honey butter--from scratch.
1/4 c. butter, softened
1/2 c. honey
Beat together until fluffy, well as fluffy as honey butter's going to get.

Chicken Green Chilie Salad
This is my best attempt at Bajio's Chicken Green Chilie Salad, which I love, but I get ticked off every time I go there and they raise the price another buck. I'm so cheap. So I had an idea to try and see if I could duplicate the flavor and wa la, I think I've got it.
Saute:
1/2 to 1 full diced onion (depends how much you like onions--I love em in meals)
1/2 cube butter
1 can diced green chilies
Add about 1/2 c. brown sugar--you want the mixture to look light brown
Add 2 large cooked chicken breasts cut up or shredded.
You can serve this:
-as a salad with tortilla chips
-on tortillas
-with refried or black beans
-with spanish rice
-topped with sour cream, guacamole, cheese, and salsa.
-the possibilities are endless.

Swedish Meatballs
I tried something new tonight and my family LOVED it! The boys ate at least half of their body weight. :) If you like meatloaf, you will like this.
1 1/2 lbs. ground beef
1/4 c. milk
1 c. bread crumbs or oatmeal (I had a loaf of bread that didn't turn out in my breadmaker, so I blended it, added parsley, garlic salt, onion powder, and seasoning salt and tossed it in a large ziplock bag. It turned out really good.)
1/4 t. pepper
1/2 t. garlic salt
1 egg
1/2 c. chopped onion
1 t. chili powder or taco seasoning
Mix all ingredients and shape into balls about 2 inches in size. Put in baking dish 1 layer flat.
Sauce
1 c. ketchup
1 small can tomato sauce
3/4 c. brown sugar
1 1/2 t. liquid smoke (I didn't have this, but it still tasted great.)
Mix to disolve sugar and pour over raw meatballs. Cook at 350 for 45 minutes. Serve over rice.
