Belgian Waffles

2 large eggs
1 3/4 c. buttermilk (Substitute regular milk and 1 T. vinegar or lemon juice)
1/2 c. butter melted and cooled to room temp.
2 t. vanilla
2 c. flour
2 T. Sugar (leave out if using savory toppigs)
2 t. baking powder
1 t. baking soda
1 t. salt

In a medium sized bowl beat together the eggs, buttermilk, melted butter, and vanilla.

In another bowl whisk together the dry ingredients; combine the wet and dry ingredients just until smooth.

Spray the waffle iron with non-stick cooking spray and cook according to iron instructions.
